Idrija Žlikrofi

INGREDIENTS

Dough:
30 dag (9 oz.) white flour
2 eggs
oil, milk, pinch of salt

Potato Stuffing:
50 dag (17 oz.)  potatoes
5 dag (2 oz.) of smoked bacon 
1 onion
For a special twist add marjoram and chives


Idrijski žlikrofi  - Idrija žlikrofi are a national dish of Slovenia made from dough with a potato filling and a characteristic shape. In view of their traditional process of elaboration and recipe, in 2002 the Ministry of Agriculture, Forestry and Food granted Idrija žlikrofi traditional product status. 

Idrija žlikrofi have been famous from the mid-19th century in the town of Idrija and its surroundings. The exact origin of this local dish has not been established due to a lack of historical sources. 

Dough
Mix all the ingredients and start kneading.  Knead at least for 10 minutes and then leave the dough to rest for 30 minutes. After 30 minutes roll it out into a rectangle and place the stuffing shaped into balls 3 centimetres from the edge of the pastry in a line.

Cover the stuffing with the remaining pastry and then use a cutting knife to cut the dough lengthwise between the balls. Press the edges of the cubes formed in this way and form žlikrofi (see picture). Cook them in salted boiling water for 12 minutes. 

Stuffing
Put the washed potatoes in salted water and cook them for 30 minutes. When they have cooled down a little peel and mash them. We add the smoked bacon, cut into small pieces, salt, pepper and chives. When the stuffing is cold we shape it into small balls.

We carry on the rich culinary traditions of our grandmothers with a twist of our own.

Our love for cooking developed through family, travel, cooking classes, and professional experience. We have more than 15 years of experience in tourism, event management, organization, and marketing. Now we would like to combine the two things we enjoy most – cooking and working with people.
